Enira White, Bessa Valley, Bulgaria, 2022

Producer Profile
Count Stephan von Neipperg, owner of several famous Bordeaux properties, including Châteaux Canon La Gaffelière and La Mondotte, sought out the Bessa Valley where the wonderful clay-limestone soils showed him the potential to make great wines.
In the shadow of the dramatic Rhodope Mountains, these soils provide the structure, strength and minerality that allows Stephan to create wonderful wines that are full of power and elegance.
Viticulture
From a selection of vineyards in the Bessa Valley, the grapes are checked and analysed regularly near harvest time to determine the best time to pick. All the grapes are hand-picked and checked for quality in the vineyard.
Winemaking
A soft destemming and second quality control of whole berries on a vibrating table, followed by direct pressing in a pneumatic press. Fermentation for 20 days at 14-16⁰C with each varietal fermented separately. Battonage on the heavy lees for 3 to 6 months under a blanket of Co2 before final blending, stabilisation, filtration and bottling.
Oak Ageing
No oak ageing
