During the course of Maurizio's long and illustrious career, he has consulted for well known wineries around Italy and in doing so he came across the vineyards for their Puglian wines. Both the Pugliese and Veneto wines are characterised by an irresistible drinkability, aromatic purity and exceptional value for money.
Viticulture
The fruit for Biscardo wines are exclusively sourced from naturally low yielding, hillside vineyards which are sensitively farmed to ensure they harvest perfect, ripe grapes without damaging the land where they have been growing grapes for over 150 years. Each plot and variety is hand picked at just the right moment to give the wines their characteristic pure ripe fruit flavours and perfectly balanced acidity.
Winemaking
The Biscardo philosophy is to let the quality of the fruit and the terroir of the vineyard shine through in the resulting wines which is why they tend to avoid using much oak and where they do it is invariably 500 or 2000L barrels which soften the tannins without adding too much flavour of the wood. As one of the pioneers of Amarone, judicious use of appasimento (airdrying of grapes) is used in a number of their red wines.
